An Orange Wine, wild ferment in open tanks, on skins for 7 days, then pressed and matured in acacia wood barrels. No fining or filtration and just a tiny amount of added sulphur . Zündstoff translates as an explosion and we get an aromatic explosion of exotic spices, like cardamom, ginger and cloves. Ripe red apple to taste, more ginger, very dry and mineral. |
