The Denominacion Montilla-Moriles in Andalucía is renown for the high quality of its Pedro Ximenez grapes. The wines are made in the same manner as Sherry, using the traditional "Solera and Criadera" barrel aging system. The Fino is a light, straw colour and has nutty aromas. Smooth and dry with a slightly salty tang and a lengthy finish. It is perfect served as an aperitif and with cheese, nuts or olives; it also partners seafood and rice dishes.
