Called “Fox dance” after the tranquil site of these vines, a gravelly site with a loess-rich South facing slope. Hand picked bunches in October and pressed whole. Spontaneous fermentation in stainless steel tanks and the wine is left on its lees until bottling in Spring or early Summer. Dry and citrussy and the good acidity makes it an ideal match for food.
